Healthy shrimp and avocado salad

  Healthy shrimp and avocado salad is a delicious, appetizing and quick-to-prepare dish. This recipe is enough for four people and is an ideal meal suitable for lunch or dinner.

List of ingredients:

  1. 1 kilo of medium-sized shrimp (I use 31/40 shrimp)
  2.  8 cups greens (such as arugula, spinach, or lettuce)
  3.  Extra virgin olive oil
  4.  Juice of half a lemon
  5.  1 avocado, sliced
  6.  1 leek chopped
  7.  4 ounces toasted sliced ​​almonds
  8.  Salt and black pepper
  9.  Butter cube


Method of work: 

  1. Defrost the shrimp, rinse and remove the shell.
  2. Bring a bowl and put a cube of butter in it over medium heat.
  3. When the butter is melting, put the shrimp,add salt and ground black pepper,and stir until cooked.This process takes 5 minutes.
  4. Bring a serving bowl and put the fried shrimp in butter.
  5. Add the avocado slices, vegetable leaves and shallots.
  6. Add a spoonful of extra virgin olive oil and the juice of half a lemon.
  7. Scatter the toasted almond slices over the dish.


What to serve with this shrimp salad?

Roasted artichokes with butter, garlic and toast.

Keep in mind that there are alternative ways to cook shrimp, for example on the stove, by frying with olive oil, salt and pepper or even on the grill.  You can also purchase pre-cooked shrimp ready to use in the recipe.
